Ingredient
- Basmati Rice: 2 Cups
- Cabbage, Potato, Carrot and Beans (should be cut into pieces): 1 Cup
- Peas: 150gm
- Onion Slices: 2 Cup
- Fine pieces of 2 green chilly
- Salt -according to taste
- Red chilly powder: 1 tea spoon
- Cinnamon(darchini) : 2
- Cumin powder: 1 tea spoon
- Cloves : 4
- Black pepper powder: 1/2 tea spoon
- Chopped tomatoes: 4
- Sour curd: ½ cup
- Soybean oil: 4 table spoon
- Mustard seeds: ½ tea spoon
- Kaju badam & kismis(for garnish): 3 table spoon
- Some green coriander leaves (for garnish)
Method:
Wash the rice thoroughly in water. Now add 3 ¾ cup water, 2 table spoon kaju & kismis and a little bit of salt in rice. Cook this in pressure cooker or in micro oven.
The pieces of vegetables (Cabbage, Potato, Carrot and Beans) should be fried in soybean oil separately. And the peas also should in soybean oil.
Take 1 table spoon oil in a pan and add mustard seeds, green chilly, cinnamon and cumin powder, cloves, black pepper powder and stir for about half minute.
Then add Sliced Onion and fry them for a minute until brown and add salt and red chilly powder and stir.and then add fine slices of tomatoes and fry till they are cooked.
Fried the tomatoes until they boiled.
Take sour curd and make it fine by putting in a blender add this fine sour curd and stir well.
Heat it for about 10 seconds and then add the fried vegetables.
Add the boiled rice and mix well. Mix with very light hands so that the rice does not break. Cook for 3 minutes.
Put the veg biriyni in a plat .Garnish with kaju badam & kismis and green coriander leaves. Serve the hot vegetable biryani with raita and pickle.
